So today has been extremely busy, I’m absolutely exhausted!
I travelled 6 hours from Wales to home via a brief stop at my uni to pick up some things for the weekend. I’m back in my hometown celebrating my stepdad’s birthday and we went out for dinner this evening. It’s nice to be back in my old bed but very strange to be sleeping alone after a week with someone next to me, I have so much space and don’t quite know what to do with it!
Considering I’m supposed to have started a new diet on the 1st of Feb, I’ve been doing pretty rubbish with healthy eating lately. My family and I went to Nando’s in true Chinese New Year style, and whereas I’d usually get chicken with carby sides, I opted for the avocado and green bean salad this evening.
MY WHOLE WORLD HAS BEEN CHANGED FOREVER!
This amazing meal only has 476 calories without the chicken (which is an optional extra) and has chargrilled red onions, sesame seeds, toasted seeds and of course loads of delicious salad leaves. I will definitely be ordering this again as I felt full enough that I didn’t feel like snacking at home- well, apart from a slice of birthday cake of course, it would be rude not to!
I’m very confident that I can recreate this salad at home as I am a big “rabbit food” lover and am always on the lookout for tasty and interesting new salad recipes!
