I found out that it’s national cake day in America today; those crazy people honestly have every type of day under the sun!! There’s even a ‘national sneak some zucchini onto your neighbour’s porch day’ on August 8th… I can’t even. However, I love cake and therefore feel the need to celebrate a day dedicated to it, so thank you America!
As it’s almost Christmas, I decided to make some wintry white chocolate cupcakes but couldn’t decide on whether to make minis or regular sized ones… in the end I doubled up my batter and made both! I used equal parts of flour, sugar and butter for the batter and then twice as much icing sugar as butter for the frosting. I added a bar of melted white chocolate to the frosting and decorated with some little chocolate balls.
